2Taste: the soup and the noodles

Ichiran makes a 100% pork-bone soup. The staff skim the soup slowly over a long time, so it does not get a strong pork smell ⓘ Ichiran official. The signature is the "red secret sauce". It has a chili base and mixes dozens of ingredients, then rests to age ⓘ Ichiran official. You can choose how much of it you want.

Hakata Ikkousha cooks its soup in two large cauldrons called hagama. It uses a method it calls "aged re-boiling". The shop says this brings out the pork's flavor and sweetness and creates a natural foam of fat on top ⓘ Ikkousha official. The shop describes the taste as rich but not heavy, and light after you finish ⓘ Ikkousha official.

Ikkousha's main store menu has four ramen ⓘ Ikkousha official:

All Ikkousha ramen use thin, flat noodles ⓘ Ikkousha official.

In short: Ichiran is clean and customizable. Ikkousha is thick and foamy, with spicy seafood options.

3How to order at Ichiran, step by step

Ichiran calls its system the "taste concentration system". You can eat without facing the staff and focus only on the ramen (Ichiran press release). Here is how it works at the main shop.

  1. Buy a ticket. Pay at the ticket machine. It takes cash, cards and many mobile payments ⓘ Ichiran official.
  2. Find a free seat. Look at the seat board at the entrance. Choose a seat that shows "空" (empty) (Ichiran press release).
  3. Fill in the order form. Choose your preference for seven items: noodles, dashi (broth), richness, chashu (pork), green onion, red secret sauce and garlic ⓘ Ichiran official. Forms are in English, Korean and Chinese too ⓘ Ichiran official.
  4. Hand over the form and ticket. Wait for your bowl to arrive in front of you.
  5. Order extra noodles without speaking. Put the kaedama plate on the button at the back of your seat. It makes a sound and staff come to collect it ⓘ Ichiran official. A full kaedama is 210 yen and a half is 150 yen ⓘ Ichiran official.

The exact choices for each of the seven items are not on the official page we checked. You will see them on the form in the shop.

There is also a video with multilingual subtitles that explains how to use the shop ⓘ Ichiran official. It is worth watching before you go.

4Ordering at Ikkousha: what we know

Ikkousha's official website does not explain how ordering works. It does not say if there is a ticket machine, an English menu or a set layout of seats ⓘ Ikkousha official. Prices and kaedama prices are also not on the official menu page.

What we do know:

For general tips on ordering at any Hakata ramen shop, such as noodle firmness and kaedama, see our guide on how to order Hakata ramen (linked below). If you want details before you go, check the official site or call the store at 092-432-1190 ⓘ Ikkousha official.

5Payment: cards, QR codes and cash

This is one of the biggest practical differences.

Ichiran sells tickets from a machine. It accepts ⓘ Ichiran official:

Ikkousha accepts only cash and barcode payment ⓘ Ikkousha official. It does not list cards. The types of barcode payment are not listed. If you do not have a Japanese payment app, bring yen in cash.

How tax is shown in Ichiran's price is not confirmed. Prices may change, so check the official site before you go.

6Hours, holidays and late-night visits

Ichiran Main Head Shop is open 24 hours ⓘ Ichiran official. Hours may change depending on the situation. A late-night charge applies from 22:00 to 6:00 ⓘ Ichiran official. The amount is not shown on the official page. The shop is open every day of the year, but it may close suddenly for maintenance (Crossroad Fukuoka). When it is busy, you may not be able to enter even before last order ⓘ Ichiran official English page.

Hakata Ikkousha Main Store hours ⓘ Ikkousha official:

So after a late night in Nakasu, Ichiran is the easy choice. On a Sunday evening, Ikkousha closes early, so plan ahead.

Neither shop gives official waiting times. Lines vary by day and hour.

7Seating, luggage and language support

Ichiran has 40 seats, all solo "taste concentration counter" seats: 14 on the first floor and 26 on the second ⓘ Ichiran official. There are no tables and no private rooms. In the February 2024 renewal, the first floor changed from tables to counters, and the dividers became about 13 cm taller (Ichiran press release). This is great if you are eating alone. It is less fun for a group that wants to talk.

There is a place to leave a suitcase inside the shop (Ichiran press release). Useful if you are heading to or from the airport or station.

Language support at Ichiran:

Ikkousha does not describe its seating, English menus or luggage space on its official site. Check the official site before you go.

  2. Arriving at Ikkousha late on a Sunday → It closes at 21:00 on Sundays and on the last day of a holiday run ⓘ Ikkousha official. Go earlier, or go to Ichiran.
  3. Forgetting the late-night charge at Ichiran → From 22:00 to 6:00 there is an extra charge ⓘ Ichiran official. Go before 22:00 if you want the standard price.
  4. Expecting to sit together as a group at Ichiran → All seats are solo counters with dividers ⓘ Ichiran official. Enjoy the quiet and talk after.
